It’s a cliché, but it’s true: Bigger isn’t always better—especially, for certain types of travelers, when it comes to cruise ships. While large cruise lines do offer some amazing amenities—from Broadway-style productions to lavish spas to sprawling ice-skating rinks—sometimes it’s the little things that make a big difference. We talked to some industry experts who agree: If any of the below apply to you, consider booking your next sail on a smaller ship.
YOU DON’T LIKE CROWDS

Think of it this way: Chances are you won’t be competing for a lounge on the sundeck. Smaller cruise ships are more sparsely populated, and fewer people means less hassle during embarkation and disembarkation.

“You can walk on and off the ship with more ease and no lines,” Margarita Navarrete ofCruisePlanners.com points out. “This comes in handy especially during sightseeing. You can tour in the morning, come back on the ship for lunch, and leave again in the afternoon or evening. Guests can come and go as they please.”
YOU ENJOY BEING SPOILED

Personally monogrammed pajamas, butler service, a poolside steward who’s ready to polish your sunglasses—these are some of the niceties that come with an intimate ship.

“Smaller ships have a high level of service,” says Stewart Chiron, founder ofTheCruiseGuy.com. “It’s a completely different experience with fewer people as there is [with] a higher ratio of crew to guests.” This allows the crew to pay more attention to detail, such as what your favorite cocktail might be.

“Recently on a Seabourn cruise, the bartender would have my husband’s brand of Scotch at the ready and hand it to him on his way through the lounge,” says Linda Coffman, founder ofCruiseDiva.com. “On some lines, everyone has a butler, not just passengers in suites,” she adds. That can make a meaningful difference for travelers who are celebrating.

“We celebrated our wedding anniversary on a Silversea ship, and when we left our room our butler handed me a long-stem red rose,” Coffman says. ”When we came back from dinner that night, there was a special table set up in our room, with a cake and balloons. Small ships go out of their way to make those occasions special. You won’t find that on a large ship unless you pay extra.”
YOU’RE A FOODIE

Not only are open dining times a valued bonus (passengers are not relegated to timed seatings on small ships), but smaller can also be better in terms of food quality. A manageable dining room allows for local sourcing, for starters.

“If you are on a small ship in Alaska, for example, you are likely going to have salmon for dinner that was caught that morning,” Coffman explains.

A small kitchen makes all the difference in quality, too, says Sudesh Kishore, executive chef ofSeaDream Yacht Club.

“When one has a well-designed, compact kitchen, the executive chef has complete control of all aspects of the operation and is able to check every dish going out of the kitchen for quality. Having the executive chef personally involved in the food preparation is only possible in a smaller operation.”

On ships like SeaDream I and SeaDream II, the number of guests in the dining room is on par with any medium-sized restaurant. Therefore, food is prepared to order, which is impossible on a large cruise ship feeding thousands of passengers.
YOU’RE AN ADVENTUROUS TRAVELER

Small ships have the advantage of accessing ports that large ships can’t. This can mean anything from traveling up the Thames in London to chasing the Northern Lights in Scandinavia to getting up close and personal with sea turtles in the Galapagos.

“Small ships tend to go to off-the-beaten-path ports. In fact, only small vessels can travel through places like the Galapagos or Antarctica,” Chiron points out. “Even in places like the Mediterranean, where I have been many times, it was a small ship that took me to spots that I have never seen, and that a larger ship couldn’t dream of getting into.”

And there are special perks that come with small-ship access, too.

“I sailed on a Silversea ship that docked on the river right across from the Hermitage in St. Petersburg,” Coffman says. “So the Hermitage opened early, just for people on our ship. We were the only visitors in the building that morning.”

For example, the luxury small river-cruise line AMAWaterways features art cruises, on which guests can take painting classes, attend lectures by art historians, and visit where the masters worked. Customized land tours are also geared toward small group excursions that range in style, difficulty, duration and theme.

“Nearly everything is customizable on a river cruise,” says Kristin Karst, AMAWaterways executive vice president. “There is truly something for everyone.”

Celebrity Cruises Reveals Fine Dining Trips



It’s no secret that Celebrity Cruises courts foodies, but now the line has innovated a series of events to reach out to travelers who revel in fine dining. In the past, Celebrity has opened special land-based “pop-up” restaurants on both coasts in order to prove just what a good meal its chefs can whip up, and the Celebrity team has also worked its culinary magic at the famed James Beard House in New York City.

Now Celebrity has programmed four “Excite the Senses” cruises that will offer a "comprehensive sensory experience." Those booking these itineraries will enjoy in-depth cooking demonstrations, food tastings, and exquisite dinners paired with beverages. The behind-the-scenes culinary experiences—presented by Celebrity chefs, sommeliers, and beverage experts—will be a highlight of the voyages.

If you missed Celebrity’s 2012 appearance at the James Beard House, chefs will reprise the special menu during the March 9th Excite the Senses voyage. Celebrity’s vice president of Food and Beverage Operations, Scott Steenrod, will host the dinner, with chef John Suley and corporate executive chef W. Thomas Szymanski preparing the degustation menu.

Un-Cruise Adventures Unveils Sea of Cortes Itineraries

Un-Cruise Adventures—a spunky, independent company that excels in small ship cruising—is adding another yacht to its fleet for a total of eight intimate ships that each carry between 22 and 88 travelers.

The line’s newest ship, the 64-passenger Safari Voyager, is in Colombia now undergoing renovation. Once it has been updated, the ship will sail year-round luxury expeditions inMexico's Sea of Cortes starting in November 2013. Four itineraries will be offered from La Paz, Cabo, and Guaymas.

Safari Voyager will sail those waters throughout 2014 and 2015 before transitioning to Central America in December 2015. A variety of itineraries will be offered, including winter expeditions in Costa Rica, summer voyages in Belize, and Panama Canal transits in spring and fall. Details for the Central America sailings will be available later this spring.



The vessel will take the same laidback approach to luxury as its sister ships. An American crew and engaging onboard naturalists set Un-Cruise Adventures apart from mainstream cruise lines. The ships are small enough so the captain can change the itinerary on the fly and take travelers where the action is. Un-Cruise guests often hop on a skiff at a moment’s notice to visit a pod of whales or get close to bears on shore, and sometimes they’ll just jump off the stern swim step to swim with sea turtles, dolphins, or seals.

Safari Voyager will offer 33 outside staterooms, two single cabins, and four suites. The Library and Sun Deck will be central gathering places and everyone will enjoy the stern swim platform from which you can snorkel, kayak, stand-up paddle board, or board a skiff for further expedition of the area. The Main Deck Dining Room will accommodate all guests for meals during one seating.



Luxury Adventure cruises include all meals, activities, wine/beer/spirits, and transfers to and from the port. In addition to its offerings in Mexico’s Sea of Cortés, the line also offers Active and Heritage Adventures in Alaska, the Hawaiian Islands, Columbia and Snake Rivers, as well as Coastal Washington and British Columbia.

San Francisco's Best New Bakeries

San Francisco has long been famous for its sourdough bread, but recently, a frenzy for $4 toast has stolen the spotlight. In the past year or so, several new bakeries in the City by the Bay have become destinations in their own right, for carb-loving locals and visitors alike. Here are some top picks to check out on your next visit.
B. PATISSERIE



Fine-dining pastry chef Belinda Leong partnered with French baker and San Francisco Baking Institute founder Michel Suas to create B. Patisserie, a luxurious bakery and cafe space in Pacific Heights. Famous for its kouign amann and bostock pastries, the cafe also features other Viennoiseries, exquisite cakes, and verrines. Generous tartine sandwiches are served with salads at lunchtime. Try one topped with seasonal ingredients like burrata and fresh tomatoes.

THE MILL



Josey Baker is a self-taught baker of artisanal breads. What sets his bakery apart is that The Mill, true to its name, mills its own grains. Baker's much-lauded toast isn't actually $4, but $3.50 or $3.75, depending upon which topping you choose—options include local butter from grass fed cows, peanut butter, cream cheese, housemade chocolate nut spread, or strawberry jam. The massively thick slices are toasted to order.

Insider Tip: The Adventure Bread is dense and gluten-free, and will hold up for several days if you want to take a loaf home.
LE MARAIS



While the name Le Marais evokes all things French, the inspiration for this bakery came from across town, at the venerable Tartine Bakery, and the farmers' market. Frenchman Patrick Ascaso created his bakery and adjoining restaurant in the Marina that has the vintage feel of a French farmhouse, and uses organic ingredients and flour from Central Milling. The signature item is the divine pain au chocolat et banane, flaky croissant dough stuffed with chocolate and thick pieces of banana. Delicate pastries are beautifully decorated with edible flowers, and all bread is baked on-site.

Insider Tip: The levain loaves and baguettes are not like others you'll find around town. The dough hydrates for 17 hours and the result is deeper flavor and a loaf that stays fresh for days.
MARLA BAKERY



Not far from Ocean Beach is Marla Bakery, a shabby-chic space with pale-blue walls and weathered wood accents. Amy Brown and Joe Wolf learned to cook and bake from family members, and the name Marla is comprised of family members' initials. The restaurant menu is farm-to-table, with most goodies coming from the wood-fired oven. For breakfast, try the famer's cheese and green onion turnover, and for an afternoon snack, the dark chocolate chunk cookie with espresso.

20TH CENTURY CAFE



While it may not be a traditional bakery, 20th Century Café has a magician in Michelle Polzine, the owner and baker who conjures up traditional Eastern European delicacies in a picture-perfect cafe with a marble counter, inspired by the coffeehouse culture in Vienna. The pièce de résistance is her honey cake, with nine tender layers of cake and rich buttercream frosting. Sandwiches, salads, quiche, strudel, and knishes offer diners something savory as well.

Insider Tip: Don't miss seasonal items like the drinkable butterscotch or pierogi made from sour cream, served with damson plum jam.
CRAFTSMAN AND WOLVES



Along the hippest stretch of the Mission District is Craftsman and Wolves, a boutique-like cafe and bakery. Owner William Werner is another talented pastry chef who previously worked in fine-dining establishments, but his refined creations have an edge. You'll find unique savory treats like "The Rebel Within," a muffin filled with asiago, sausage, green onion, and a soft cooked egg, or a tart with fromage blanc, charred eggplant, red quinoa, and raisins. Sweet flavor combinations in tarts and cakes include raspberry and eucalyptus, or pine, vanilla, and kaffir lime.

Insider Tip: The chocolate croissant served as a stack tastes like nothing you've ever had before. It's almost too pretty to eat. Almost.

Where to Eat and Drink in Fort Lauderdale Now

With 23 miles of beach along the Atlantic, an average temperature of 76°F, and 3,000 hours of sunshine annually, it's no wonder Greater Fort Lauderdale receives more than 12 million visitors per year. Add to those perks a new wave of dining and drinking establishments, and this South Florida scene is only getting hotter. Here, we present six of the newest spots to grab a bite and a buzz in Broward County.
SWEET NECTAR



It's challenging to halt the ordering process at Sweet Nectar, where a custom designed charcoal grill and extensive raw bar keep diners lingering on its patio well into the evening hours. Brunch here is an elaborate affair, with inventive offerings including challah French toast, a soft shell crab BLT, and duck bacon. To complement the menu's appeal is the restaurant's charm, from the cocktails served in mason jars to the cafes au lait served in metal milk cartons.

What to Order: Rose mimosas are flavorful and bottomless, and the aji panca coulis gives the char-grilled octopus a kick.
HOT & SOUL



Any preconceived notions diners might have upon stepping into the strip mall-situated Hot & Soulare quickly forgotten after one bite from husband-and-wife team Mike Hampton and Christy Samoy. The duo calls upon their time in South Florida, San Diego, and New Orleans to inspire their menu, which ranges from chicken and andouille gumbo, to mole-steeped Colorado pork shoulder with jalapeno slaw. The team keeps the diner at the center by offering half portions of several dishes, in addition to a six and eight course tasting menu—the best way to sample this couple's culinary prowess.

What to Order: It's easy to fill up on the chicken adobo, a hearty heaping of on-the-bone chicken thighs, bay leaves, and peppercorn, but be sure to save room for the decadent sheets of dark chocolate bark, decorated with pistachios, sea salt, and extra virgin olive oil.
FUNKY BUDDHA BREWERY



Chances are South Florida visitors and locals alike will encounter Funky Buddha Brewery offerings around town before ever setting foot in its Oakland Park space that opened last June—but they should. Daily rotating food trucks, a 30-barrel brew house, and more than a dozen varieties of creative flavors (think Blueberry Cobbler Ale, Chocolate-Covered Cherry Porter, and Floridian Hefeweizen), make this 20,000 square-foot property well worth a visit. On Thursdays, Saturdays, and Sundays, guests can learn more about the facility through guided tours (tasting glasses in tow) before trying their hand at the property's adult playground, complete with bocce ball, corn hole, and giant Jenga.

What to Order: Opt for any of the brewery exclusive creations, which serve as micro trial batches before a flavor makes its way to the 30-barrel production line.

Hungry sun-seekers need only venture across Fort Lauderdale Beach Boulevard to S3, a vibrant eatery from the folks behind Las Olas scene pleasers YOLO and O Lounge. A comprehensive menu comes in shareable portions, from specialty sushi (a Thai tuna roll features avocado, coconut, macadamia, and jalapeno) to small plates (ricotta gnocchi packs in flavors of truffle and shiitake). Culinary offerings might chart the globe, but an airy dining room opening onto oceanside views keep diners pleasantly grounded in the blissful Floridian surroundings—especially between sips of banana coladas.

What to Order: Satiate hunger pangs quickly with a round of the tomato bread—simple, but flavorful slabs of bread topped with grated tomato, olive oil, and manchego.
STACHE

Mixologist John Lermayer helms the bar at Stache, where he pours an array of both classics (French 75s and Pimm's Cups) and original creations (a smoky Mezcalero is balanced with Aperol and grapefruit). When patrons aren't dancing in the dual-level, 5,000 square-foot space, they're taking a break in any of the mismatched vintage armchairs for prime views of the venue's other entertainment: a rotating mix of cabaret shows, concerts, and black-and-white silent films that play in tandem with the music.

What to Order: Embrace the Southern summer with the Peach Whiskey Cobbler (Buffalo Trace bourbon, mint, and fresh peach).
KALUZ



Arrive early for your reservation at Kaluz to enjoy a drink on the lounge-chair-studded, Astroturf lawn. Start with the wine list, whose 130 options offer as much variety as the land and sea focused menu. Modern American dishes offer a slightly unusual take on classic dishes (think quinoa salad, barbecue chicken flatbread, and barrel-cut filet mignon) and are served in enormous portions. Save room for the heaping bread pudding dessert, decked out in dried cranberries, Grand Marnier, and vanilla custard, and served with multiple spoons.

What to Order: The Bar Harbor Crabcake abounds with jumbo lump crab, Old Bay, lemon, parsley, and roasted red pepper.
